IS YOUR COFFEE ORGANIC?
Gaining organic certification at the farm level is near impossible for an individual farm, and difficult for cooperatives without significant funding. Naturally, there are a good deal of obstacles an entire cooperative would need to overcome before gaining certification. Because of this, a lot of farms do not seek out organic certification. Some cooperatives do, because there is a large portion of the market that’s interested only in organic, but again companies like ours aren’t extremely interested in this. Good coffee comes from both organic and non-organic farms alike. In addition to all of this, it’s important to remember that farms can be operating basically organic without having the official certification. We all have to remember that most coffee farmers may only farm a couple acres of land, if not less. Because of this, it does not make sense for the average farmer to ultimately become concerned with being “organic.” At a certain point it may make sense for a larger estate farm or an entire cooperative to seek out certification, but this is too often the exception to the rule, not the standard. Simplified, we partner with growers who are in quality coffee for the long haul, and those farmers must care for their land in order to provide for their families long-term. So, even though our roasting company has achieved Organic Certification, we don’t restrict ourselves to exclusively organics, as we want you to have the best selection possible, not just from the farmers or large corporations who can afford to pay for the certifications. So, if you're looking for quality comparable to an organic coffee, I believe that any of the coffees offered on our site would meet your standards.

DOES YOUR COFFEE HAVE SUGAR IN IT?
There are no sugar or carbs in our coffee! When you see the flavors like caramel, brown sugar, or cherries listed - those are simply tasting notes that are used across the board in the coffee world by those who cup coffee. There isn't literal sugar or caramel added to our coffees. A standard cup of black coffee is 5 calories a cup, which is where ours runs at too.
WHAT IS YOUR DECAF PROCESS?
Our coffee roaster uses Sugarcane Decaffeination for the decaf process! This method can also be referred to as the solvent method, or ethyl acetate method. In short, this method uses molasses which is distilled from sugarcane as a solvent. They ferment the molasses to create alcohol. First the beans are soaked in water and steamed to swell the beans, basically opening up the bean's pores to the process. They then go through an ethyl acetate wash where the solvent grabs onto the caffeine. It is then soaked and steamed again to remove the decaf and solvent, leaving the regular bean behind! It's an extremely safe and delicious way to make decaf, and it's most common in Colombia where they have sugarcane in abundance. The opening of the bean's pores explain why they look oily, because the oils are more easily ready to move toward the bean's surface even at lighter roast levels!.
